Oatmeal Chocolate Chunk Cookie Dough Bites

- ½ cup almond flour
- ½ cup whole grain oats
- 2 Tbsp coconut sugar
- 3 Tbsp creamy almond butter
- 4 Tbsp unrefined coconut oil, melted
- 1 tsp vanilla
- pinch sea salt (or a little more if you like a sweet + salty combo)
- ½ dark chocolate bar, cut into chunks -- or about ½ cup dark chocolate chips
- In a small bowl, combine oats, almond flour, sea salt and coconut sugar.
- In a separate small bowl or cup, combine almond butter, coconut oil and vanilla.
- Stir well to combine.
- Pour wet ingredients into dry ingredients and stir until well incorporated.
- Add chocolate chunks and stir until evenly dispersed.
- Take tablespoon size amounts of batter and, using your hands, squeeze and roll the batter into balls until they are somewhat firm.
- Add balls to a lined baking sheet and put in the freezer for 1-2 hours until they are set.
- Transfer to the fridge and an airtight container and store for up to a week.
- You can also store and eat them right out of the freezer. Enjoy!
