Oatmeal Chocolate Chunk Cookie Dough Bites

Ingredients
  • ½ cup almond flour
  • ½ cup whole grain oats
  • 2 Tbsp coconut sugar
  • 3 Tbsp creamy almond butter
  • 4 Tbsp unrefined coconut oil, melted
  • 1 tsp vanilla
  • pinch sea salt (or a little more if you like a sweet + salty combo)
  • ½ dark chocolate bar, cut into chunks -- or about ½ cup dark chocolate chips
Instructions
  1. In a small bowl, combine oats, almond flour, sea salt and coconut sugar.
  2. In a separate small bowl or cup, combine almond butter, coconut oil and vanilla.
  3. Stir well to combine.
  4. Pour wet ingredients into dry ingredients and stir until well incorporated.
  5. Add chocolate chunks and stir until evenly dispersed.
  6. Take tablespoon size amounts of batter and, using your hands, squeeze and roll the batter into balls until they are somewhat firm.
  7. Add balls to a lined baking sheet and put in the freezer for 1-2 hours until they are set.
  8. Transfer to the fridge and an airtight container and store for up to a week.
  9. You can also store and eat them right out of the freezer. Enjoy!
